It was always our dream to live in the nature but more important to live with the nature. The owners of a nearly untouched wonderful peace of nature gave us the possibility to take care for it. We started to live there in a trailer and we use electricity and warm water just from the sun. On a field of 40.000 m² there are about 400 olivetrees, 40 fruittrees and we have our own vegetablegarden. We dont use any Chemicals because we trust in the power of nature. We love the biologic way and this love we give directly to our product.We also try to reduce the consumption of commercial products; we share with neighbours.
We harvest all the gifts of nature. 100% by hand. We use what we find.
WHY WE HARVEST OUR OLIVES BY HAND?
For centuries olives have been traditionally harvested by hand. It is very important for us to mention that it is totally understandable that mechanical harvesting has replaced manual harvesting as much as possible. The prices of olive oil are falling further and further out of control, forcing farmers to work more and more olive groves to ensure their survival and to cover the costs of the harvest. Sad but true - the cost of petrol and tools is rising, the cost of oil is sinking to dumping prices. Where this will lead, nobody knows at the moment. But now back to us:
We had a lot of respect for harvesting our four hundred olive trees by hand. Some even smiled at us and only a few believed in our success.It was completely new territory for us, we first contacted a good friend, voluntarily and without payment, for the olive harvest. It was an incredibly exhausting but very instructive day. We asked a lot and Dimitri was happy to share his knowledge with us. The silence, the birdsong and the incredible view made the day an unforgettable experience. This day took away some of our fears and strengthened our decision to harvest by hand. On 17.11.2019 it was finally time. Equipped with nets, lanadis (small hand combs), a long saw and branch shears, we started the harvest. super weather, great atmosphere and a quite respectable result showed us already on the first day that harvesting by hand was the absolutely right decision and we stick to it!

There are Greeks who swear by it: Drink a glass of olive oil a day and you will live forever. This may not be everyone's cup of tea - but the healthy effect of the golden "extra virgin" in our daily diet has long been scientifically proven.
Many of the health benefits of olive oil have been known for years - and they are becoming more and more so the more intensively researchers study this centuries-old product from the Mediterranean region.
A TYPICAL DAY in THE
The best olive oil in the world is the olive oil "Extra Virgin" or also called "Extra Virgin". This means that the oil is natural and of outstanding quality.
The acidity of the oil is fundamental for this denomination. The better the oil - the lower the acidity. This may
shall not exceed 0,8 %. Carefulness during the harvest influences this, so the acidity increases enormously, if for example olives are processed to ripe ones - the time of harvest is essential.
With a peak value of 0.25 percent, our oil is the lucky bearer of the name "Extra Native".
It is astonishing that in every supermarket you can only buy oils with the name "Extra Native". However, the worldwide demand for high-quality olive oil cannot be met at all. This is why there is an impressive amount of adulteration. Insiders assume that up to 40 percent of the oils are mixed with inferior products and should not even bear the designation "extra virgin olive oil". Often, the adulteration is so good that even the most experienced testers fall for it.
One of the most important quality characteristics is that our oil is turbid. This shows that the oil is fresh and cold pressed, which means that it has not been flitrified.
This fresh olive oil is distinguished by its bitterness and pungency.
What should I pay attention to with unfiltered oil?
Over time, small suspended particles that are still in the oil settle at the bottom of the bottle. This is not harmful, but a completely natural process.
Unlike a widespread misconception, olive oil is highly heatable - it is just as suitable for frying as it is for preparing cold dishes such as salads etc.
Already the beginning on the day of the harvest is decisive. So we meet early in the morning for a collective breakfast. At this point we would like to thank all our helpers who have shown their tireless efforts during the 2019 olive harvest. More about this in the diary. It is briefly discussed which trees will be harvested today and what our daily goal is. Then we lay out the up to 100m² large nets around the olive trees. Systematically all branches with olives that would otherwise have disturbed are now sawn off and are chopped up on the net with branch shears and carefully combed. It is absolutely important to move carefully on the nets so as not to step on the olives. Admittedly, this often looks very strange. When all the olives have been combed off, the olives are cleaned from branches and leaves. Since we could not afford the machine for cleaning, we had a great idea that saved us a lot of time and nerves, there is a contribution to this in our diary. Afterwards the olives are filled by hand into the bags.
For a short lunch break we sit comfortably in the nature. After a little snack we continue, everyone is in good spirits and in top shape. The day goes by like in the flight, tree by tree we roam through the olive grove. The highlight of the day is the weighing in the evening. Here we first see if our performance of the day was good enough. Satisfied and exhausted we sit together in the evening mostly still long and have a great time.
