How we process the Kalamonolives

After harvesting and washing for several weeks (we also have a blog entry for this), we put our olives in to give them a special taste.

We make a brine of salt, water, vinegar and a secret ingredient, peel kilograms of garlic and cut celery. To ensure that all olives have the same taste, we weigh everything very carefully.
